Fried Glass Noodle

Fried glass noodle has been a traditional dish that is a must have in all my family gatherings, celebrations and Chinese New Year. My mum, Mdm Lim Siew Kiok taught all her daughters and daughter-in-laws to cook this dish.

It is not an easy dish to cook. It is also not a very common dish that you can see in the hawker stalls.

Ingredients

• 500g glass noodle

• 600g chicken breast meat

• 10 pcs dried mushroom

• 15 pcs shallots, sliced

• 10 spring onion, cut into small pieces

• 3 tbsp dark soya bean sauce

• 3 tbsp light soya bean sauce

• 150ml oil

• 1L water


Method

1. Soak glass noodles in water to soften it.

2. Boil chicken breast meat in 1L of water. When cooked, remove and tear meat into small pieces. Keep the soup.

3. Soak mushrooms in water. Cut into strips when soft.

4. Heat up about ¾ bowl or cup of oil in a wok.

5. Add sliced shallots into the wok and fry till golden brown then remove and set aside.

6. Add chicken strips and fry.

7. Add mushrooms and fry till fragrant.

8. Add chicken soup.

9. Add glass noodle and fry until soft (add water if necessary).

10. Add dark soya bean sauce and light soya bean sauce to taste.

11. Add in spring onions and stir-fry.

12. Sprinkle 1 tbsp of fried shallots on top and serve.


Helpful Tips

Taste the texture of noodle while cooking to prevent over cooking.
