Pork Trotter Bee Hoon

My Dad’s family in China owns a bee hoon or commonly known as rice vermicelli factory and every time our family visits them, they will always cook the pork trotter bee hoon. Since then, my late mum brought the recipe back home and started cooking this dish for every family’s gathering.

Interestingly in China when they cooked this dish, they will cook from scratch using organic food. However here in Singapore, we substitute some of the ingredients with canned food, the methods are the same with slightly different taste but oh so delicious still!

Ingredients

• 1 can (397g) of pork leg with mushroom

• 1 can (141g) of stewed pork chops

• ½ head Chinese cabbage

• 1 pkt (400g) rice vermicelli

• 1 clove garlic

• 1 tsp of oil


Method

1. Slice chinese cabbage into thin strips.

2. Chop garlic into fine pieces.

3. Remove the gravy from the canned pork leg and stewed pork chop and set aside.

4. Remove soft bones from the can of stewed pork chops.

5. Soak 1 pkt of rice vermicelli for 1 min (max.) in boiling hot water and remove to drip dry in basket.

6. Stir-fry garlic till semi brown.

7. Stir-fry chopped / strips chinese cabbage.

8. Add soften vermicelli to the garlic and chinese cabbage.

9. Stir in the can of pork leg with mushroom.

10. Stir in the can of stewed pork chops, break pork chops into smaller pieces to spread evenly.

11. Stir-fry all the ingredients evenly. Add the gravy from the canned pork little by little to saltiness preference.

12. Ready to serve.


Helpful Tips

1. Do not soak vermicelli beyond 1 min and if still a little hard, soak a little more till soft. Soaking the vermicelli for too long will turn the vermicelli mushy.
2. If not salty enough, add a teaspoon of light soya sauce. Sauces from the stewed pork are quite salty.
3. You may add egg if you like but it is not mandatory to do so.
4. I prefer using Narcissus brand pork leg with mushrooms and stewed pork chops. I also prefer using Tai Sun brand rice vermicelli.
