Red Yeast Wine Chicken

Mdm Doreen Koh loved to cook ever since she was a teenager. She recalls fondly of when she watched her aunt prepare confinement dishes and that was when she first learnt this dish.

Mdm Koh too prepared it during her daughter’s confinement to keep her strong and healthy. She has since taught her friends how to make this wholesome dish as well.

Ingredients

• 4 pcs chicken thigh

• ½ cup of red yeast wine

• 100g of ginger (shredded)

• 2 pcs of black fungus

• 2 tbsp sesame oil

• 2 tbsp soya sauce

• 2 tbsp chicken marinade

• 2 cloved of garlics (chopped)


Method

1. Wash the chicken and pour hot water onto it and set aside.

2. Add soya sauce, chicken marinade, sesame oil and red yeast wine to marinate the chicken for 2 hrs before cooking it.

3. Use the sesame oil to deep fry the shredded ginger till light brown over small fire. Keep half of the fried ginger for garnishing.

4. Use the leftover oil and ginger to stir-fry the chicken and black fungus for 5 mins.

5. Add in the soya sauce, half cup of red yeast wine and ¼ cup water, covering the wok until the chicken is cooked.
