Steamed Eggs with Pork

This dish always reminds me of growing up in Malaysia and how far we have come.
We grew up in a family of 6, Pa is the sole breadwinner of the family. Ma was a housewife. We didn’t have much growing up and after Pa lost his job, they sold our home and we started living on rental. We were really struggling to make ends meet, so Ma started babysitting and taking in some home-based odd jobs like gluing paper bags, sewing shoes. She was constantly rushing in and out of the house but would still pick us up from school and send us home before going out to work.
Ma made it a point to be home at 5pm daily to cook dinner for us. We were poor so it was always one pot dish for dinner. She would make this Steamed Egg with Pork a few times a week. It is a really quick and simple dish to go with steamed white rice.
Ma is now 67 years old, and she still cooks for the family daily, making this dish at least once a week. Not only we love it, but her grandchildren also grew up eating this dish as well. Now that I have children of my own, I learnt to cook this dish too, however my youngest son will always say “Ah Ma’s steamed egg with pork is nicer than yours”.
My parents are now enjoying the fruits of their labour. We are successful in our own ways, and it is because of the love my mom have for us and the grit she has shown us.
• 200g minced pork
• 3 eggs
• 1 salted egg (optional)
Marinate:
• 1 tsp sesame oil
• 1 tsp chinese cooking wine (Hua Tiao Wine)
• ½ tsp white pepper
• 1 tsp cornstarch
• 2 tsp light soy sauce (reduce to 1 tsp if adding salted egg)
1. Mix all the ingredients under marinade with minced pork.
2. Using a chopstick, mix marinade and pork thoroughly, stirring only in one direction.
3. Beat 3 eggs in a separate bowl. Keep the eggshell.
4. In a steaming plate, place minced pork and spread it evenly.
5. Pour in beaten egg. Stir to combine both egg and minced pork.
6. Add in 3x water to the egg mixture, using the eggshell to measure.
7. If adding salted egg, crack it into the mixture and carefully place the salted egg yolk in the center of the dish.
8. Place the steaming plate in the steamer, turn to medium heat.
9. Steam for approximately 15 minutes or until egg is set.
10. Serve hot with white rice.
You may use a strainer to strain the beaten egg to get a smooth texture. Otherwise don’t worry if the steamed egg looks rough, its normal.
