Yellow Wine Chicken Soup

When my mother, Mdm Teo, was still alive, she would prepare this dish for the women in the family who were going through confinement after giving birth. I love this dish as it is nutritious, especially during postpartum. I can feel the love from my mother through this dish.
• 1 whole chicken
• 1 bottle of rice wine (Yellow wine)
• 2 tbsp sesame oil
• 150g ginger
1. Pound the ginger and squeeze out the juice. Set juice and ginger aside separately.
2. Wash and chop the chicken into pieces (not too big).
3. Stir-fry the ginger on high heat till dry (do not add oil).
4. Turn to low heat when ginger produces smoke.
5. Add 2 tbsp of sesame oil, stir-fry until golden brown.
6. Add chicken pieces.
7. Add water and ginger juice and simmer for 20 mins.
8. Stir-fry again and add yellow wine.
9. Boil for 2 mins.
For confinement, can add more ginger.
