Fried Noodles

I have just retired as a Finance Manager and started cooking again in early 2020, which is during the COVID-19 period.

I remember this Fried Noodles dish fondly as a child, growing up in a Chinese village. Pork was served only during festivals like the Chinese New Year or significant events e.g. my Grandmother’s birthday. We add a bittersweet vegetable which my family used to grow in our garden called sayur manis. All my siblings love this vegetable.

After the pandemic’s relaxation, my siblings had numerous family gatherings and I would always prepare this dish as it is well-loved by my siblings.

Ingredients

• 200g yellow noodles

• 100g minced pork

• 100g red carrot

• 100g chinese cabbage

• 50g bean sprouts (head and tail removed if you prefer)

• 50g sayur manis (mani vegetable)

• 100g white onions

• 2 eggs

• 2 tbsp hua tiao chiew (chinese cooking wine) mixed with 1 tbsp water

• 1 tsp meat curry powder

• 1 tsp chicken curry powder

• 1 tbsp light soya sauce

• 3 tbsp dark soya sauce

• 1 tsp cooked sesame seeds

• 2 tbsp sesame oil

• 2 tbsp sunflower oil

• A small pot of water (enough to cover the noodles)


Method

1. Bring a small pot of water to boil and blanch the yellow noodles.

2. When the noodles is cooked, rinse the noodles in cold running water. Set the noodles aside with a little cold water. This is to keep the noodles damp.

3. Skin, clean and chop carrot and cabbage into thin strips to about 2 inches long or about the same length as the bean sprouts.

4. Dice white onions or coarsely mince it.

5. Add sunflower oil and onions to a deep-frying pan 6. Add meat and chicken curry powder. Mix well.

7. Add minced pork, hua tiao chiew and light soya sauce. Mix well and cook for 1 – 2 mins.

8. Add carrot and cabbage. Cover with a lid and let it simmer for 3 mins.

9. Add bean sprout and the mani vegetable. Stir well. Add 2 tbsp of cold water if it is too dry.

10. Add noodles.

11. Pour the dark soya sauce, sesame seeds and sesame oil over the noodles and mix.

12. Crack 2 eggs into the noodles. Cover with lid and cook for 3 mins.

13. The dish is ready to serve.
