Kerala Potato Stew

When I went to Kerala to visit my husband’s family for the first time I was expectedly nervous even though I know they are lovely and kind as my husband is.

For our first meal together, my mother-in-law made us a vegetable stew served with appams for breakfast. It looked like a simple dish, but it blew my mind and every apprehension I felt eased away. The taste felt like a warm hug welcoming you home.

This dish became one of the first few dishes my mother-in-law taught me and it helped me to learn more about my husband’s culture. It remains one of my favourite things to eat not only because it is so delicious, but also because of the precious memory it holds for me.

Ingredients

• 3 potatoes

• 2 red onions

• 1/2 inch of ginger

• 3 green chilli padi

• 1 inch of cinnamon

• 2 cloves

• 250ml of coconut cream

• 1-2 sprigs of curry leaves

• Ghee (to taste)

• Salt (to taste)

• Freshly ground black pepper (to taste)


Method

Preparation

1. Peel and cut potatoes and onions into big chunks.

2. Cut the stems off the green chillies and slit them in half.

3. Peel skin off the ginger and cut into small pieces.


Cooking

1. Put the cut onions, potatoes, green chillies along with the cinnamon and cloves into the pressure cooker.

2. Add a cup of water into the pot, cover and bring to a boil. (For a regular pot, let it boil till the potatoes are soft and the onions are translucent and soft.)

3. Add the coconut cream and mix well.

4. Add salt to taste, along with freshly ground black pepper.

5. Add in the curry leaves and a tablespoon of ghee, then bring to a simmer and switch off the flame.

6. Serve with rice, bread, or appams.

Helpful Tips

Prepping the ingredients in advance will really help shorten the cooking time.

Strongly suggest using freshly ground pepper as it will really give the dish so much more flavour.

Recommended to use a pressure cooker with a whistle for this, otherwise you can also use a regular pot.
