Sarjit comes from a big family with 11 siblings. When she was young, her late Dad is the sole breadwinner for the family and her late Mum is a Nyonya. As a housewife, her mum will plant vegetables including yam in their back yard.
In order to cut cost & feed everyone in the family, Sarjit’s Mum often prepare this dish – Steamed Yam Cake. It became one of her favourite dishes which she also passed down to all her 5 daughters.
Till date, Sarjit & her siblings always cook this dish for their Mum during her death anniversary as a remembrance and think back about their childhood memories when eating the yam cake.
• 500g yam
• 190g rice flour
• 190g corn flour
• 10 small onions, sliced
• 5 pcs garlic, minced
• 3 dried shitake mushroom, soak in water & diced
• 1 handful of dried prawns, soak in water & diced
• 1 tbsp of 5 spices powder
• White pepper
• Salt
• 1.5L of water
• 1 cup of cooking oil
1. Cut yam into cubes and steam for about 10 mins till soft & set aside.
2. Mix rice flour, corn flour, salt, white pepper, 5 spices powder and 1.5L water together & set aside.
3. Fry onions with oil, remove & set aside.
4. Fry dried prawns with oil, remove & set aside.
5. Fry garlic & shitake mushroom with the same oil till fragrant
6. Add fried onions, dried prawns, steamed yam & fry together.
7. Pour in the flour mixtures.
8. Stir gradually till the mixture becomes thick & translucent.
9. Turn off the fire.
10. Pour the completed mixture into a steaming tray and steam for 40 mins.
11. Leave the steamed yam cake to cool for 30 mins.
12. Cut and serve.
