Ginger Crab

I never had the chance to see my family’s home on Pulau Tekong. My grandparents previously lived on the island, and my parents grew up there. I imagine it must have been quite an adventure, but my mum always reminds me how much better we have it in our day.

To get to school, she would have to trek through the jungle to reach the pier where a boat would take her to school at Changkat Changi. She always dreaded the journey not because she disliked school but because she was terrified of snakes!

Both my maternal and paternal grandfathers were fishermen (I guess that is how my parents got together), on days where the catch was particularly good, the family would enjoy some fresh crabs together.

The recipe is easy to prepare, but the nostalgic taste really brings out the sweet taste of the crabs. It almost feels like you are on a beach back in the kampung days.

Ingredients

• 2 crabs

• Ginger, cut into slices

• Garlic, chilli and dark sauce (Dipping sauce)


Method

1. Wash and clean the crab.

2. Heat up the stove.

3. Add in slices of ginger (you can put in as many pieces you like according to personal preference)

4. After a few minutes or when ginger turn brown, add in your crabs.

5. This dish is ready to serve when the crab turns red and slightly charred.


Helpful Tips

Do not overcook the crab and this dish is best eaten when it is hot.
