In the 90’s, my parents went on a honeymoon to Europe and my father came across a pastry shop and he loved the financier there. After coming back from the holiday, my mom explored and tried out her own recipe until it became successful. Since then, it has become their anniversary dessert.
• 250g butter
• Egg white from 10 eggs
• 5g baking powder
• 20g corn flour
• 70g cake flour
• 110g almond flour
• 300g icing sugar
• 25g honey
1. Heat butter over medium heat for 5 mins, then let it cool down fully.
2. Whisk egg until frothy.
3. Add baking powder, corn flour, cake flour, almond flour, and icing sugar in and whisk the mixture.
4. Add egg white and honey into (3) and whisk it.
5. Pour in the heated butter and mix.
6. Scoop out the above and put into mould.
7. Bake for 160℃ for 15 mins.
