New York Cheesecake

Growing up, having a cheesecake would signify a happy event. It would be the cake that my mum would make for us when we celebrated a birthday or when we had a gathering with friends and family. My mum’s cheesecake brings back fond memories of time spent with loved ones.
Beyond the cheesecake, it tells a story. On the surface, the cheesecake looks simple and plain. It carries no toppings or decorations. However the simplicity of the cheesecake would make it most beautiful. This is the beauty of the cheesecake. Just like my mum – one who lives life with no frills. A simple life. The plain cheesecake depicts her mindset and way of life – practical with very little, yet happy and content.
Today, it will be the cake that I would make for my family – with modifications. I add a little bit of me into the cheesecake. Some strawberries as toppings. Just like how changes are made in life. However, the substance remains the same. A plain cheesecake.
Base:
• 1 pkt digestive biscuits (500g)
• 70g melted butter
• 1 tbsp honey
Cheesecake:
• 250g full cream milk
• 2½ tbsp gelatine
• 90g warm water
• 4 egg yolks
• 90g sugar
• 60g avoset cream
• 450g cream cheese
• 2 tsp lemon juice
• Strawberries (optional)
Base:
1. Mash the digestive biscuits in a bowl.
2. Stir in melted butter and honey and mix well.
3. Press the biscuit mixture in a cake tin to form a mould.
Method:
1. Heat milk in a pot until boiling.
2. In a medium bowl, whisk gelatine with warm water .
3. In a separate bowl, whisk egg yolks and stir in sugar.
4. Stir in step 3 into the pot of hot milk and heat until it thickens (not till boiling), set aside until warm.
5. Pour some of the warm egg mixture to the gelatine and stir it, then pour it back to the egg mixture and stir well. Set aside to cool.
6. In a large bowl, whip cream at high speed until thick.
7. Pour the cooled egg mixture into the cream and mix well with whisk by hand.
8. Whisk cream cheese to a smooth consistency using machine, and sieve until no lumps.
9. Stir in lemon juice.
10. Pour the cream mixture to the cheese mixture and mix well.
11. Pour the completed mixture onto the biscuit base.
12. Cover and set it overnight in the fridge.
13. Decorate with strawberries before serving.
I prefer using Davis Gelatine Granulated as it is natural, and Philadelphia Cream Cheese.
