You can’t miss Auntie Lucy. Her beaming smile and vivacious personality radiates through the Telok Blangah neighbourhood, charming everyone like the flowers in the community garden that she tends to.
For the last 42 years, she has shared many precious recipes with us through cooking classes conducted at the local community centres.
From a Peranakan family herself, she learnt many traditional dishes from her grandma, but this recipe for fried fish stuffed with Nonya chilli is one most significant for her. For all of us who has tried it, the flavours are unforgettable, just like Auntie Lucy herself.
• 1 kg fish (mackerel/ selar)
• 1 stalk of pink rojak flower, slice
• 5 tbsp cooking oil
• ½ tbsp sugar
• 1 tsp salt
• ½ bowl tamarind water
• 10 shallots
• 15 dried chillies
• 5 cloves of garlic
• 3 candlenuts
• 2-inch shrimp paste
1. Cut the fish on both sides along the back to form a pocket, then rub with salt.
2. Heat the oil and fry the pounded ingredient until fragrant, then add in the rojak flower, sugar, and tamarind water. Wait until cold, then stuff into the fish pocket.
3. Heat the oil and fry the fish until fragrant.
