Steamed Milk Egg Pudding with Strawberry

My late mum, Mdm Koong Ah Lang, has a long-term diabetes and was recently diagnosed as a liver cancer patient. She loves sweet treats despite her health conditions. She loves to eat the Hong Kong dessert: Hong Kong Steam Milk Egg Pudding with strawberry (双皮奶). As this dessert is very sweet, I decided to come out with a recipe on my own so that she can enjoy it in a healthier way.
• 240ml whole milk
• 5g sugar
• 80g egg white
• Strawberry slices
1. Prepare steamer with boiling water.
2. Add milk and sugar in a saucepan over low heat till warm to touch but not boiled to dissolve sugar.
3. Beat the egg whites. (Hand whisk for about 1 min)
4. Slowly stir in the milk mixture.
5. Strain the mixture through fine mesh.
6. Split and pour mixture into 2 ramekins (or small bowls that can be steamed) equally.
7. Cover with aluminum foil or cellophane wrap.
8. Steam for 8 mins.
9. Turn off heat and let pudding sit in steamer for another 8 mins.
10. Garnish with strawberry accordingly and serve.
Use ripe and sweet strawberries.
Optional – add honey as additional sauce.
